Food-minded Angelenos will recognize Sawtelle Blvd in West Los Angeles as a major hub for Asian food ranging from ramen to sushi and Szechuan to boba tea. Last month, a new fast casual restaurant called Tigawok opened its first β€œmini bowl” concept, specializing in classic Chinese dishes like Mapo Tofu and Cola Chicken as well as American-influenced ones like Kung Pao and Orange Peel Chicken. The high-throughput, cafeteria-style model revolves around batched food that has been prepped in a centralized commissary, cooked in robotic woks, and served via a typical makeline for $2.99-$5.99 per dish. In less than two months, the restaurant already has been drawing large crowds during lunch and dinner service that can span onto the sidewalk. It has already signed a lease for a second location in Burbank, CA in a former Panera Bread. This week, HNGRY sat down for a tasty lunch to witness the Tigawok experience firsthand.
